Saison: A Pandemic Bakery Grows Up on a Bed Stuy Corner

Sammy Rees’ summer opening brings seasonal bakes, vintage finds and a reason to make the morning a little sweeter.

Saison has a home on a Bed Stuy corner: 434 Hancock St., at Marcus Garvey Boulevard. Sammy Rees’ bakery opened July 11, 2026, after years of baking from her Crown Heights apartment. Its current hours are Thursday through Sunday, 8:30 a.m. to 3 p.m.

The story began during the pandemic, when Rees turned her love of gathering people around food into weekly boxes of produce, flowers and baked goods. Brownstoner traced that backyard project through catering and wedding cakes to the storefront, and reported that Rees had previously been Vogue’s home market editor. The shop gives a long running kitchen project a place in the neighborhood’s daily routine.

The opening counter leaned sweet and seasonal. Rees announced muffins, cake slices, cookies and scones, with rotating specials, Parlor Coffee and Masha Tea. Stone fruit frangipane cake, blueberry cornmeal muffins and rose banana bread were among the bakes she discussed before opening. Treat those as a picture of Saison’s approach, rather than a promise of what will be waiting on an October morning.

There is a design story here, too. Saison credits Studio N&TL with its bakery design. Rees filled the opening shop with vintage treasures, stationery and other collected objects, carrying the sensibility of a carefully set table into a neighborhood bakery. A slice of cake and a little browsing make a perfectly respectable morning plan.

Whole cakes remain part of the business. The official shop lists seasonal cake orders for pickup at the bakery, while the events page covers catering, wedding cakes and bespoke gifting. If the occasion needs a particular cake, use the order page to check the available options and pickup arrangements before making the trip.

The useful move is to go early. Saison says it bakes a limited quantity each day, so a listed closing time is not a guarantee that your favorite treat will still be there. Let the counter make the decision, then leave enough time for a walk.

For readers coming from Williamsburg or Greenpoint, this is a Bed Stuy detour. Give it its own morning instead of squeezing it into the North Brooklyn brunch circuit. Some plans are better when the only appointment is cake.
